Design Challenge

Fresh fruit and vegetables sold in the retail shops must comply with regulation on quality. Therefore ‘ugly’ fruit and veg which look strange or are damaged are not shelved in the groceries because they fail to meet these traditional retail standard. Such products represent a problem because the reality is that the average consumer does not buy them and in this way they contribute to food waste. In Denmark they represent the 30% of the annual production: 368.000 tonnes of fruit and vegetables wasted by Danish producers every year. Not only a sustainable issue, but an economic loss of 1.4 billions of euros currently used as fertilizer or biogas for a cheap price.

Approach

The objective of the first day was to set the direction, identifying a problem to investigate. A series of brainstorming lead to a fast ideation in the context of food. After defining the challenges in the chosen area, the team produced a series of business ideas to explore further. At the end of the first day the vision and the mission of the selected business idea gave the overall direction to the project. The second day the team challenged the main idea by focusing on a single aspect of it at the time. The research let the team turn the service concept into a viable business idea by identifying the business model and the market for this business. During the third day the swot analysis helped in understanding the critical points of the idea as well as supporting the creation of a vision and mission for it. A 3-year budget enabled the team to envision the potential financial challenges of the solution in order to prevent future drawbacks.

Solution

T-Farm is an online platform to connect primary producers to potential customers for optimising the value of second class products in primary production and offer a cheaper option for food industry. T-Farm enables fruit and veg to connect with food companies, local cantines, private labels, event organisers in order to find a match between offer and demand.

Result
